Wild Boar haggis Sliders

Ingredients

  • 300g Pork mince    
  • 227g Wild boar haggis          
  • 5g Chopped fresh flat leaf parsley
  • Sea salt & freshly milled pepper to taste
  • 30g Rapeseed oil
  • 10 x mini burger or brioche buns

Additional extras to consider:
Little gem lettuce
Portobello mushroom
Ketchup or salsa
Skinny fries

Method

  1. In a large bowl break up the wild boar haggis and gently mix with the pork mince.
  2. Add the parsley, folding in gently.
  3. Form into 10 x 50g balls.
  4. Flatten the balls and place in fridge to firm up prior to use, best chilled for 4-6 hours to rest and flavour to develop.
  5. Heat a skillet to a high heat and add a little rapeseed oil
  6. Season the sliders to taste and cook for 5 minutes on either side until golden brown and piping hot.
  7. Serve in the mini buns with your choice of garnish.
