Sausage & Goats Cheese Salad

A filling salad bursting with flavour

Ingredients

  • 1 packet Macsween Pork & Haggis Sausages
  • 10ml rapeseed oil
  • 80g mixed baby leaves
  • 40ml olive oil
  • Juice of 1\2  lemon
  • 10g Dijon mustard
  • 100g goat's cheese
  • 2 granny smith apples, sliced
  • 30g sun dried cranberries
  • 10g pine nuts, toasted
  • 100g cherry tomatoes, cut in half
  • Seasoning

Method

  1. Heat the oil in a pan & cook sausages until golden brown & piping hot, reserve hot.
  2. Mix the olive oil, mustard, lemon juice & seasoning.
  3. In a large bowl, mix the leaves, apple, cherry tomatoes & sun blush cranberries. Season and divide into 2 salad bowls.
  4. Slice the goat's cheese and arrange on the salad, sprinkle with the pine nuts.
  5. Slice the sausages and arrange on the salad.
  6. Serve immediately.
